“Boil cut-up chicken … “

Oh cookbook from that long-ago time when self was a grad student, when she was leaving Manila woefully ill-equipped to handle the challenges of boiling an egg, and when Dearest Mum enrolled her in Lorivi Reynoso’s International Cooking classes!

As a result of the cooking classes, self came to Stanford armed with recipes for making Boeuf Bourguignon and Salade Nicoise (Self never once tried this, not once in 25 years), and Scallops Parisian Style.

Her “go-to” recipe, however, turned out to be a hand-written recipe which kusinera of the moment (Vangie) scribbled on a note pad and handed to self. Here’s the recipe in its entirety (Self will italicize all the words that cook underlined in her note):

Boil cut-up chicken.
Saute
– chopped onions
– ginger
Mix into the boiling chicken/ the sauteed onions and ginger.
Add salt/pepper.
Boil until chicken is cooked well.
Add cut-up sukini just before dinner time.

The cook isn’t with us any longer, of course. In fact, self heard she lives in Queens with a sister and holds fabulous disco parties on weekends, when she is “off” from being a nanny to some rich person’s kids in Manhattan.

Stay tuned, dear blog readers. Stay tuned.
