Well my husband is very meticulous, so only he could have the patience to devote hours to boiling the bad smell out of the tripe. A lot of scum comes out with the first boiling, so you have to add vinegar. I can only focus for so long on cooking before I lose interest. Definitely, how I ended up even knowing how to cook anything is a miracle. “Callos” = tripe (I think?)
